		<description><![CDATA[Our red wines have almost completed their secondary fermentation and will be racked shortly.  Racking is the process of emptying the barrel, cleaning out the sediment and pumping the wine back into the cleaned barrel.  The racking  process can take place several times during wine-making,  prior to bottling. Our white wines are complete and will be bottled soon.
